Well I read that if you can't find the proper cheese then Mozzarella is a good substitute, so that's what I use:-) But it's supposed to be some curd cheese or something.

Yeah, I agree about that - I happen to think he's very under-rated as an actor. I was blown away by how well he did in Truman Show, Man in the Moon and Eternal Sunshine of the Spotless Mind.
